There's a great new way to eat mozzarella sticks with these Fried Mozzarella and Olive Finger Sandwiches. They are crunchy on the outside and gooey on the inside. When mixed with green olives, they make a great party snack or appetizer.
Ingredients: 8 slices of fresh mozzarella cheese. 16 pitted green olives. 8 slices of white bread. 1 cup all-purpose flour. 2 large eggs. 1 cup breadcrumbs. Salt and pepper to taste. Vegetable oil for frying. Fresh basil leaves for garnish. Marinara sauce for dipping.
Instructions: Place 4 slices of mozzarella and 8 olives between 2 slices of white bread to make 4 sandwiches. In a shallow bowl, add flour and season with salt and pepper. In another bowl, beat the eggs. In a third bowl, place the breadcrumbs. Dip each sandwich in the flour, then the beaten eggs, and finally coat with breadcrumbs, ensuring they are fully coated. Heat vegetable oil in a deep frying pan to 350F 180C. Fry the sandwiches until they are golden brown and the cheese is melted, about 2-3 minutes per side. Remove the sandwiches from the oil and drain on paper towels to remove excess oil. Cut each sandwich into fingers or quarters for easy serving.
