A delicious and vibrant take on the traditional marshmallow cereal treats are these Super Gooey Lucky Charms Marshmallow Treats. These are ideal whenever you want a fun and oozy dessert, but especially on St. Patrick's Day.
Ingredients: 6 cups Lucky Charms cereal. 4 cups mini marshmallows. 1/4 cup unsalted butter. 1/2 teaspoon vanilla extract. 1/4 teaspoon salt. 1/2 cup white chocolate chips optional. Green food coloring optional. Rainbow sprinkles optional.
Instructions: Grease and reserve a 9 x 9 inch 23 x 23 cm square baking pan. Heat a large saucepan over low heat to melt the unsalted butter. When the mini marshmallows are fully melted and smooth, add them and stir continuously. Add the salt and vanilla extract and stir. Add a few drops of green food coloring to add even more color and excitement. After taking the saucepan off of the burner, quickly fold in the Lucky Charms cereal until the marshmallow mixture coats it evenly. Using a spatula or your hands, transfer the mixture to the baking pan that has been greased and press it down evenly. Rainbow sprinkles can be added to the mixture and gently pressed into the mixture if desired. Allow the candies to settle at room temperature for approximately half an hour. If you want to drizzle some white chocolate over it, microwave the white chocolate chips for 20 seconds at a time, stirring in between, until they melt smoothly. Pour the melted white chocolate over the treats that have cooled. Give the white chocolate drizzle a few minutes to harden. Cut the marshmallow treats into squares or bars after they have set. Present and savor!
