The lemon parmesan cauliflower rice and garlic butter shrimp in this dish are both very tasty. It's a tasty, low-carb, and gluten-free alternative to regular rice dishes that's also quick and easy to make.
Ingredients: 1 lb shrimp, peeled and deveined. 4 tbsp butter. 4 cloves garlic, minced. 1/4 cup fresh parsley, chopped. Salt and pepper to taste. 1 head cauliflower, grated or riced. 2 tbsp olive oil. 1/4 cup grated parmesan cheese. Zest of 1 lemon. Juice of 1/2 lemon. 1/4 cup chicken broth or water.
Instructions: In a skillet, melt 2 tbsp of butter over medium heat. Add minced garlic and saut until fragrant, about 1 minute. Add shrimp to the skillet, season with salt and pepper, and cook until pink and opaque, about 2-3 minutes per side. Stir in chopped parsley and remove from heat. In another skillet, heat olive oil over medium heat. Add grated cauliflower and cook until tender, about 4-5 minutes. Stir in lemon zest, lemon juice, and chicken broth or water. Cook for an additional 2 minutes, allowing flavors to meld. Remove from heat and stir in grated parmesan cheese. Serve the garlic butter shrimp over the lemon parmesan cauliflower rice.
