This Contest-Winning Chicken Wild Rice Casserole is a hearty and comforting dish that combines tender chicken, earthy wild rice, and savory vegetables in a creamy sauce, topped with melted cheddar cheese.
Ingredients: 2 cups cooked wild rice. 2 cups cooked chicken, shredded. 1 cup sliced mushrooms. 1/2 cup diced onion. 1/2 cup diced celery. 1/2 cup diced carrots. 1 can cream of mushroom soup. 1 cup chicken broth. 1/2 cup sour cream. 1 cup shredded cheddar cheese. 1/4 cup chopped parsley. Salt and pepper to taste.
Instructions: Preheat the oven to 350F 175C. In a large mixing bowl, combine cooked wild rice, shredded chicken, mushrooms, onion, celery, and carrots. In a separate bowl, mix together cream of mushroom soup, chicken broth, and sour cream until well combined. Pour the soup mixture over the rice and chicken mixture, and stir until evenly coated. Season with salt and pepper to taste. Transfer the mixture into a greased casserole dish. Sprinkle shredded cheddar cheese on top. Bake in the preheated oven for 25-30 minutes, or until bubbly and cheese is melted. Garnish with chopped parsley before serving.
