Ingredients: 2 cups cauliflower florets. 1 jalapeno pepper, sliced. 4 slices of bread. 1 1/2 cups shredded cheddar cheese. 2 tablespoons butter. 1/4 cup mayonnaise. 1/2 teaspoon garlic powder. 1/2 teaspoon onion powder. Salt and pepper to taste.
Instructions: Steam the cauliflower florets until tender, about 5 minutes. Drain and set aside. In a small bowl, combine the mayonnaise, garlic powder, onion powder, salt, and pepper. Mix well. Spread the seasoned mayonnaise mixture on one side of each slice of bread. Place a layer of cauliflower florets on two slices of bread, then add jalapeno slices on top. Sprinkle shredded cheddar cheese over the cauliflower and jalapenos, then top with the remaining slices of bread, mayo-side down. In a skillet, melt the butter over medium heat. Carefully add the sandwiches and cook until the bread is golden brown and the cheese is melted, about 3-4 minutes per side. Remove from the skillet, let cool slightly, then slice and serve.
