These Cajun garlic shrimp noodle bowls are bursting with flavor and perfect for a quick and satisfying gluten-free meal. Tender shrimp are seasoned with Cajun spices and garlic, then served over gluten-free rice noodles and sautéed vegetables. This dish is easy to make and sure to impress!
Ingredients: 1 lb large shrimp, peeled and deveined. 2 tablespoons olive oil. 3 cloves garlic, minced. 1 teaspoon paprika. 1/2 teaspoon cayenne pepper. 1/2 teaspoon dried oregano. 1/2 teaspoon dried thyme. Salt and pepper to taste. 8 oz gluten-free rice noodles. 1 red bell pepper, thinly sliced. 1 yellow bell pepper, thinly sliced. 1 small onion, thinly sliced. 2 cups baby spinach. 2 green onions, thinly sliced for garnish. Lemon wedges for serving.
Instructions: Sprinkle the shrimp with salt, pepper, oregano, thyme, paprika, cayenne pepper, and 1 tablespoon of olive oil in a large bowl. Toss the shrimp until they are well covered. In a large skillet over medium-high heat, heat the last tablespoon of olive oil. After you add the shrimp, cook them for two to three minutes on each side, until they are pink and opaque. Take the shrimp out of the pan and set it aside. Put the onion and bell pepper slices in the same pan. After 3 to 4 minutes, the vegetables should be soft. In the meantime, follow the directions on the package to cook the gluten-free rice noodles. Remove the water and set it aside. When you add the baby spinach to the skillet with the cooked vegetables, cook for one to two more minutes, until the spinach wilts. Spread the cooked rice noodles out in serving bowls before putting the bowls together. Cajun garlic shrimp and sauted vegetables should be put on top.
