Ingredients: 1 package 14.3 ounces Oreo cookies. 6 tablespoons unsalted butter, melted. 1.5 quarts peppermint ice cream. 1 cup heavy cream. 8 ounces semi-sweet chocolate chips. 1 teaspoon peppermint extract. Crushed candy canes, for garnish.
Instructions: Preheat oven to 350F 175C. Place Oreo cookies in a food processor and pulse until finely crushed. Transfer crushed cookies to a bowl and mix in melted butter until well combined. Press the cookie mixture firmly into the bottom and up the sides of a 9-inch tart pan. Bake the crust for 10 minutes, then let it cool completely. Once the crust is cool, spread softened peppermint ice cream evenly over the crust. Place the tart in the freezer and let it freeze until firm, about 2 hours. In a small saucepan, heat heavy cream until it begins to simmer. Remove from heat and stir in chocolate chips and peppermint extract until smooth and well combined. Let the chocolate ganache cool slightly, then pour it over the frozen ice cream layer in the tart. Return the tart to the freezer and let it freeze until the ganache is set, about 1 hour. Before serving, garnish with crushed candy canes for added peppermint flavor and decoration.
