Eggless trutti fruity cookies these are very sweet, crunchy, crumbly buttery fruity biscuits with its unique aroma!! Here is the recipe: Ingredients 1 cup all purpose flour (maida) 2 tbsp custard powder (vanilla flavored) 1/2 tsp baking powder 1/2 cup salted butter, (room temperature) 1/2 cup powdered sugar 1/4 Cup Cashew Powder (kaju powder) 1/2 cup colourful tutti frutti 1/4 tsp cardamom powder 1/2 tsp vanilla essence or pineapple essence 1-2 spoon of milk if required Method to make these trutti fruity cookies: In a bowl Sift the flours, custard powder and baking powder. Add tutti frutti, kaju powder and cardamom powder. Give it a good stir and keep aside. In a large mixing bowl, wisk the softened butter and powdered sugar untill it becomes soft and fluffy. Add the pineapple or vanilla essence and mix again. Slowly add the flour mixture in batches, mixing it with your fingers. It will start to form crumbs. If needed, add milk to bind the dough together Once it comes together, gently make a soft dough (do not knead or the cookies will become hard). Divide the dough into 2 parts and Shape them into tight logs. Wrap each log in cling film and refrigerate them for at least an hour. Just before baking, preheat the oven to 180 degrees Celsius or 350 degrees Fahrenheit. Grease oil or butter on the baking tray. Or line with parchment paper too. Remove log from the refrigerator, unwrap from the plastic film and Gently, with a sharp knife, cut into slices about ¼ nch thick and place on greased baking tray. Place in preheated oven and bake for 13 to 15 minutes till the edges of the cookies start to brown. Leave on the pan for about 2 mins, then gently remove and place on cooling racks to cool completely. Once completely cool, store in airtight.
