Adobo chicken from Mexico is a tasty and spicy dish that is marinated in a mix of garlic, chipotle peppers, and other spices. When you grill the chicken, it gets a smoky char that brings out the strong flavors of the marinade even more. This dish is great for a barbecue or a Mexican-style dinner during the week.
Ingredients: 4 chicken breasts. 3 cloves garlic, minced. 2 chipotle peppers in adobo sauce, minced. 1 tablespoon olive oil. 1 tablespoon apple cider vinegar. 1 teaspoon ground cumin. 1 teaspoon dried oregano. 1/2 teaspoon smoked paprika. Salt and pepper to taste.
Instructions: Olive oil, apple cider vinegar, ground cumin, dried oregano, smoked paprika, salt, and pepper should all be mixed together in a bowl. Put the chicken breasts in a shallow dish or a plastic bag that can be closed again. Make sure the chicken is evenly covered with the marinade as you pour it over it. For the best flavor, let it sit in the fridge for at least 30 minutes or overnight. Warm the grill up to a medium-high level. Take the chicken out of the marinade and throw away the extra marinade. Chicken should be cooked through and juices run clear after 6 to 8 minutes on each side. It should be turned over once. After taking the chicken off the grill, let it rest for a few minutes. If you want, you can serve it hot with fresh cilantro on top.
