The flavors in this Skinny Slow-Cooker Beef Tortilla Casserole are a tasty and healthy take on traditional Mexican food. It is easy to make in the slow cooker and is full of lean ground beef, beans, vegetables, and spices.
Ingredients: 1 lb lean ground beef. 1 onion, chopped. 1 red bell pepper, chopped. 1 can 15 oz black beans, drained and rinsed. 1 can 15 oz diced tomatoes. 1 cup frozen corn kernels. 1 cup salsa. 1 tablespoon chili powder. 1 teaspoon cumin. Salt and pepper to taste. 6 corn tortillas, cut into wedges. 1 cup reduced-fat shredded cheddar cheese. Optional toppings: chopped cilantro, diced avocado, Greek yogurt.
Instructions: In a skillet, cook ground beef, onion, and red bell pepper until beef is browned and vegetables are softened. Drain excess fat. Transfer beef mixture to slow cooker. Add black beans, diced tomatoes, corn, salsa, chili powder, cumin, salt, and pepper. Stir to combine. Layer half of the tortilla wedges over the beef mixture. Sprinkle with half of the shredded cheese. Repeat with remaining tortilla wedges and cheese. Cover and cook on low for 4-6 hours or on high for 2-3 hours, until cheese is melted and bubbly. Serve hot, garnished with optional toppings as desired.
