Instructions: Preheat the oven to 375F. 190 degrees C. In a medium mixing bowl, combine the flour and salt. Shortening should be cut in until the mixture resembles coarse crumbs. 1 tablespoon at a time, add cold water until the mixture forms a ball. On a floured surface, roll out the dough and cut it into 4-inch circles. Make circles in muffin cups. Whisk together sugar, cornstarch, and salt in a medium saucepan. Stir in the blueberries and water. Cook, stirring constantly, over medium heat until the mixture thickens and boils. Remove from the heat and add the butter. Fill tart shells halfway with blueberry mixture. 20 minutes, or until the crust is golden brown. Allow to cool completely before serving.
