This easy and tasty red lentil soup is great for a cozy meal and can be made without meat. It has a lot of protein and fiber, which makes it healthy and filling.
Ingredients: 1 cup red lentils. 1 onion, chopped. 2 cloves garlic, minced. 1 carrot, diced. 1 celery stalk, diced. 4 cups vegetable broth. 1 teaspoon ground cumin. 1 teaspoon ground coriander. 1/2 teaspoon turmeric powder. Salt and pepper to taste. 2 tablespoons olive oil. Fresh cilantro for garnish optional.
Instructions: In a large pot, heat olive oil over medium heat. Add onions and garlic, saut until onions are translucent. Add carrots and celery, cook for another 2-3 minutes. Stir in lentils, vegetable broth, cumin, coriander, turmeric, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20-25 minutes or until lentils are tender. Using an immersion blender, blend the soup until smooth. Adjust seasoning if necessary. Serve hot, garnished with fresh cilantro if desired.
