Ingredients: 4 cod fillets. 1/4 cup chermoula sauce. 1 cup bulgur wheat. 2 cups water. 1 cucumber, diced. 1 red bell pepper, diced. 1/2 red onion, finely chopped. 1/4 cup fresh parsley, chopped. 1/4 cup fresh mint, chopped. Juice of 1 lemon. 2 tablespoons olive oil. Salt and pepper to taste.
Instructions: Marinate the cod fillets in chermoula sauce for 30 minutes. While the cod is marinating, rinse the bulgur wheat and cook it in 2 cups of water according to package instructions. Fluff with a fork and let it cool. In a large mixing bowl, combine the cooked bulgur wheat, diced cucumber, diced red bell pepper, finely chopped red onion, chopped fresh parsley, and chopped fresh mint. In a separate small bowl, whisk together the lemon juice, olive oil, salt, and pepper to make a dressing. Pour the dressing over the bulgar salad and toss to combine. Preheat a grill or grill pan over medium-high heat. Grill the marinated cod fillets for about 4-5 minutes per side or until they are cooked through and have grill marks.
