Instructions: In a large pot, heat olive oil over medium heat. Add diced onion and saut until translucent. Stir in minced garlic, mushrooms, and chestnuts. Cook until mushrooms release their moisture. Pour in vegetable broth, coconut milk, and add thyme. Season with salt and pepper. Bring to a simmer. Reduce heat and let it simmer for 20-25 minutes, allowing flavors to meld. Optional: Stir in nutritional yeast for added creaminess and flavor. Use an immersion blender to puree the soup until smooth. Alternatively, transfer to a blender in batches. Adjust seasoning if needed. Serve hot, garnished with fresh chives.

Ingredients: 1 cup water. 1/2 cup unsalted butter. 1/4 tsp salt. 1 cup all-purpose flour. 3 large eggs. 1 tsp vanilla extract. Vegetable oil, for frying. 1/2 cup granulated sugar. 1 tsp ground cinnamon.
Instructions: In a saucepan, combine water, butter, and salt. Bring to a boil. Remove from heat and add all-purpose flour. Stir until it forms a smooth dough. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract. Heat vegetable oil in a deep pan to 350F 175C. Transfer the churro dough to a piping bag with a star tip. Pipe strips of dough into the hot oil and fry until golden brown, about 2-3 minutes per side. Remove churros from oil and drain on paper towels. In a shallow bowl, mix granulated sugar and ground cinnamon. Roll the fried churros in the mixture to coat. Serve warm and enjoy!

The warmth of bourbon whiskey and the rich flavors of Guinness stout come together in these homemade marshmallows. Ideal for enjoying as a sweet treat on their own or adding a distinctive twist to your hot chocolate.
Ingredients: 1 cup Guinness stout. 3 tablespoons unflavored gelatin. 2 cups granulated sugar. 1/2 cup light corn syrup. 1/4 cup bourbon whiskey. 1/4 cup powdered sugar. 1/4 cup cornstarch.
Instructions: Transfer the Guinness into a small saucepan and set it over medium heat, allowing it to simmer. Let it settle to a half-cup. Put aside to cool. Combine the gelatin and half a cup of cold water in a different bowl. Give it five to ten minutes to bloom. The reduced Guinness, corn syrup, and granulated sugar should all be combined in a large saucepan. Stirring constantly, heat over medium-high heat until the sugar dissolves. After the ingredients are dissolved, cease stirring and let the mixture cool until the candy thermometer reads 240F 115C. In another saucepan, slowly reheat the bourbon while the sugar mixture is heating. When slightly warm but not boiling, remove from heat. Take the sugar mixture off the heat source when it reaches 240F 115C and gently stir in the bloomed gelatin until it dissolves completely. Stirring continuously, slowly pour the warm bourbon into the sugar-gelatin mixture. For 8 to 10 minutes, or until the mixture gets thick and fluffy, beat the mixture on high speed with an electric mixer. Combine the cornstarch and powdered sugar in a different bowl. Lightly dust a 9 x 9 inch 23 x 23 cm baking pan with the mixture of powdered sugar. Using a spatula to smooth the top, pour the marshmallow mixture into the pan that has been prepared. Allow the marshmallows to cure for at least four hours, or over night, at room temperature. After the marshmallows are set, cut them into the desired shapes with a knife or cookie cutters coated with the powdered sugar mixture. To keep the marshmallow pieces from sticking, toss them in the remaining powdered sugar mixture. Savor your homemade marshmallows with Guinness and Bourbon!

Ingredients: 2 boneless, skinless chicken breasts. 1/4 cup honey. 2 tablespoons Dijon mustard. Salt and pepper to taste. 4 cups mixed greens. 4 slices cooked bacon, crumbled. 1 avocado, sliced. 1/4 cup red onion, thinly sliced. 1/4 cup cherry tomatoes, halved. 1/4 cup shredded cheddar cheese. 1/4 cup honey mustard dressing.
Instructions: In a bowl, mix together honey, Dijon mustard, salt, and pepper. Place chicken breasts in a resealable bag and pour half of the honey mustard mixture over them. Seal the bag and marinate in the refrigerator for at least 30 minutes. Preheat grill to medium-high heat and oil the grates. Grill chicken breasts for about 6-7 minutes per side or until fully cooked internal temperature reaches 165F or 74C. Brush with the remaining honey mustard mixture during grilling. Remove chicken from the grill and let it rest for a few minutes before slicing it into thin strips. In a large salad bowl, combine the mixed greens, crumbled bacon, avocado slices, red onion, cherry tomatoes, and shredded cheddar cheese. Add the sliced honey mustard chicken on top of the salad. Drizzle the salad with honey mustard dressing. Toss the salad gently to combine all the ingredients. Serve immediately and enjoy!

Ingredients: 1 head cauliflower, cut into florets. 2 tablespoons olive oil. 2 teaspoons chipotle powder. 1 teaspoon cumin. 1 teaspoon smoked paprika. Salt and pepper to taste. 8 small tortillas. 1 cup black beans, cooked. 1 cup corn kernels. 1 avocado, sliced. 1/2 cup red onion, thinly sliced. 1/2 cup cilantro leaves. 1 lime, cut into wedges. 1/2 cup cotija cheese, crumbled optional.
Instructions: Turn on your oven and heat it up to 425F 220C. Sprinkle the cauliflower florets with salt, pepper, chipotle powder, cumin, and smoked paprika. Put them in a large bowl and toss them around until they are well covered. Spread the cauliflower out on a baking sheet and season it. Roast it for 25 to 30 minutes, or until it's soft and slightly crispy. During the roasting process, stir it once or twice. Follow the directions on the package to warm the tortillas. To make the tacos, put some roasted cauliflower florets and a spoonful of black beans on each tortilla. Each taco should have corn, avocado slices, red onion, and cilantro leaves on it. If you want, you can sprinkle cotija cheese on top and squeeze fresh lime juice over the top. Right away, serve the chipotle-roasted cauliflower tacos.

Remove toothpicks before serving.

Instructions: Warm the oven up to 400F 200C. Put the puff pastry sheet on a baking sheet and roll it out. The sliced chanterelle mushrooms, onion, and garlic should be cooked in a skillet until they are soft and slightly browned. Cover the puff pastry sheet with the cooked mushrooms and spread them out evenly. On top of the mushrooms, grated Gruyere cheese should be put. Whisk the eggs and heavy cream together in a bowl. Add pepper and salt. Spread the egg mix out over the cheese and mushrooms. The tart should be baked in a hot oven for twenty to twenty-five minutes, or until it is golden and set. Take it out of the oven and let it cool down a bit before you serve it. Before serving, sprinkle with fresh thyme leaves.

Return the cooked chicken to the skillet and pour the sauce over the ingredients.
