This keto-friendly frozen yogurt has a tangy twist from the goat cheese, and the honey-roasted figs add a simple sweetness. It's a tasty and refreshing dessert that will help you stick to your low-carb diet and satisfy your cravings.
Ingredients: 2 cups full-fat Greek yogurt. 4 oz goat cheese, softened. 1/4 cup powdered erythritol or sweetener of choice. 1 tsp vanilla extract. 1 cup fresh figs, halved. 2 tbsp honey or sugar-free syrup for keto. 1 tbsp butter or coconut oil. 1/4 cup chopped pecans or almonds optional.
Instructions: Put Greek yogurt, softened goat cheese, powdered erythritol, and vanilla extract in a blender. Mix until it's smooth. Put the mixture into an ice cream maker and churn it according to the machine's instructions until it's the consistency of soft serve. Warm the oven up to 375F 190C while the yogurt is churning. Put the fig halves in a small baking dish. Put honey on top and butter or coconut oil on top of that. Place the figs in an oven that has already been heated. Roast them for 10 to 15 minutes, or until they are soft and caramelized. Take the figs out of the oven and let them cool down a bit. If you want, you can serve the goat cheese frozen yogurt with honey-roasted figs and chopped pecans or almonds on top.
