Ingredients: 2 ripe avocados. 1/2 cup coconut cream. 1/4 cup fresh lime juice. 1/4 cup maple syrup. Zest of 1 lime. 1/2 teaspoon vanilla extract. Pinch of salt. 1 cup almond meal. 1/2 cup dates, pitted. 1/4 cup shredded coconut. 2 tablespoons coconut oil, melted. Lime slices and shredded coconut, for garnish.
Instructions: You can use a food processor to mix almond meal, dates, shredded coconut, and coconut oil until the mixture forms a ball. Spread the dough out evenly in the bottom of a pie pan to make the crust. Put avocados, coconut cream, lime juice, maple syrup, lime zest, vanilla extract, and salt in the same food processor. Blend until nice and smooth. Spread the avocado mix out on top of the crust using a spatula. Put it in the fridge for at least four hours, or until it sets. Before serving, top with lime slices and shredded coconut.
