Ingredients: 2 ripe avocados, diced. 1 cup cherry tomatoes, halved. 1/2 red onion, finely chopped. 1/4 cup fresh basil leaves, chopped. 1/4 cup fresh mozzarella cheese, diced. 2 tablespoons extra virgin olive oil. 1 tablespoon balsamic vinegar. Salt and pepper to taste.
Instructions: In a large bowl, combine the diced avocados, cherry tomatoes, red onion, and fresh basil. Gently fold in the diced mozzarella cheese.
