The crisp phyllo pastry shells of these Cherry Froyo Phyllo Tarts are filled with creamy Greek yogurt that has been mixed with sweet cherries. They are a great dessert for any event because they are light and refreshing.
Ingredients: 6 sheets phyllo dough. 2 tablespoons unsalted butter, melted. 1 cup Greek yogurt preferably full-fat. 1 cup frozen cherries, thawed and chopped. 2 tablespoons honey or maple syrup. 1 teaspoon vanilla extract. Fresh mint leaves, for garnish optional.
Instructions: Preheat oven to 350F 175C. Cut the phyllo dough sheets into squares, approximately 4x4 inches each. Lightly brush each phyllo square with melted butter and layer them in a muffin tin, pressing gently to form tart shells. Bake the phyllo tart shells for 8-10 minutes or until golden brown and crisp. Remove from oven and let cool completely. In a mixing bowl, combine Greek yogurt, chopped cherries, honey or maple syrup, and vanilla extract. Mix well. Spoon the cherry froyo mixture into the cooled phyllo tart shells. Garnish with fresh mint leaves if desired. Serve immediately or chill in the refrigerator until ready to serve.
