Instructions: Get the oven ready by heating it up to 400F 200C. Prepare a baking dish by greasing it. Mix cornmeal, flour, baking powder, and salt in a large bowl. Combine almond milk, maple syrup, and melted coconut oil in a different bowl and mix them together using a whisk. Mix the dry and wet ingredients together until they are just barely mixed. Grease a baking dish and pour the batter into it. Put it in the oven and bake for 20 to 25 minutes, or until a toothpick stuck in the middle comes out clean. Let it cool a bit before cutting it up and serving it.

Instructions: Preheat oven to 375F 190C. Grease a baking dish with dairy-free butter. In a large mixing bowl, combine cornmeal, sweet corn kernels, almond milk, melted dairy-free butter, honey or maple syrup, baking powder, and salt. Mix well. Ingredients: 1 lb dried pinto beans. 1 medium onion, chopped. 2 cloves garlic, minced. 1 ham hock or ham bone optional. 6 cups water or chicken broth. 1 tsp salt. 1/2 tsp black pepper. 1/2 tsp paprika. 1/4 tsp cayenne pepper optional. 1 bay leaf.
Instructions: Rinse the dried pinto beans and sort them through to get rid of any stones or other debris. Don't forget to add the ham hock or bone if you're using it. Also add the chopped onions and minced garlic. Make sure the beans are covered by at least an inch of water or chicken broth when you add it to the pot. You can add salt, black pepper, paprika, and cayenne pepper to taste. For taste, add a bay leaf. Put the lid on top of the Instant Pot and turn the valve to sealing. Cook on high pressure for 25 to 30 minutes. Let the pressure drop on its own for 10 to 15 minutes, and then carefully do a quick release. When the pressure is gone, take the lid off and throw away the bay leaf and ham hock or bone. Taste the beans to see if they need more seasoning. If they do, stir them again. Hot Southern pinto beans can be a side dish or the main course. Have fun!
