These Steak and Potato Taco Nachos are a tasty and filling take on regular tacos. Nice and quick to make, or as a snack for a game day.
Ingredients: 1 lb sirloin steak, thinly sliced. 2 cups diced potatoes. 1 cup diced onions. 1 cup diced tomatoes. 1 cup shredded cheddar cheese. 1/2 cup sour cream. 1/4 cup chopped fresh cilantro. 1/4 cup diced jalapeos. 1 tablespoon olive oil. 1 tablespoon taco seasoning. Salt and pepper to taste. Tortilla chips for serving.
Instructions: Heat olive oil in a skillet over medium-high heat. Add the diced potatoes and cook until golden and crispy, about 10 minutes. Add the diced onions and cook for another 2-3 minutes until softened. Push the potatoes and onions to one side of the skillet and add the sliced steak to the other side. Season the steak with taco seasoning, salt, and pepper, and cook until it reaches your desired level of doneness, about 3-5 minutes. Combine the steak, potatoes, and onions in the skillet and mix well. To assemble the taco nachos, place a layer of tortilla chips on a serving platter. Top the chips with the steak and potato mixture, diced tomatoes, shredded cheddar cheese, and diced jalapeos. Drizzle sour cream over the top and garnish with chopped cilantro. Serve immediately and enjoy!
