Pork and Apple Sausage Rolls
A delicious, healthy twist on the old sausage roll

Approx. cooking time: 50 minutes
1 sheet of puff pastry
100g pork, minced
1 apple, peeled and chopped
¼ cup of cranberries
¼ tablespoon of ground sage or 3 fresh sage leaves, chopped
¼ teaspoon of chili powder (optional)
½ celery stalk, chopped
2 tablespoons of breadcrumbs
1 egg
Pinch of salt
Pinch of pepper
1 tablespoon of olive oil
¼ leek, chopped
Take pastry sheet out 30 mins prior to thaw.
Line baking tray with baking paper.
In a pan, sauté leek and celery in oil until transparent.
Add pork and lightly brown.
Add apple, cranberries, sage, chili, salt and pepper.
Remove from heat, place in mixing bowl and allow to cool.
Lightly beat egg and mix to combine.
Cut pastry sheet in half.
Form a log of mixture on each half of pastry sheet.
Fold pastry over to form a roll and cut in half.
Place on baking tray with fold on bottom.
Bake for 20 minutes or until golden.
