Ingredients
2 cups grated zucchini
2 eggs, beaten
¼ cup chopped onion
½ cup all-purpose flour
½ cup grated Parmesan cheese
½ cup shredded Mozzarella cheese
salt to taste
2 Tablespoons vegetable oil
Directions
1. In a medium bowl, combine the zucchini, eggs, onion, flour, Parmesan cheese, Mozzarella cheese, and salt. Stir well enough to distribute ingredients evenly.
2. Heat a small amount of oil in a skillet over medium-high heat. Drop zucchini mixture by heaping Tablespoonfuls and then flatten down with a spatula to form a patty shape and cook for a few minutes on each side

1 clove garlic, minced

Cook the potatoes in a pot with water until smooth and puree. In another bowl mix potatoes, bread crumbs and egg, cheese, bacon, butter, cream, garlic, salt and pepper, form the patties, fry in oil.

Heat olive oil in a skillet over medium heat. Cook the patties in the skillet until golden brown on both sides, about 3-4 minutes per side. Serve hot as a side dish or snack.
