In honor of our favorite angel's 😇 birthday, Ineffable Cooking Presents:
🏴Welsh Cakes🏴
Happy birthday Michael!! 🎂🎁🎈🎉🍰 This recipe is ridiculously easy. These traditional small cakes from Wales take literally minutes to prepare and cook and you don't even need to preheat your oven. Bonus: They taste AMAZING!!
1 ⅓ Cups all-purpose Flour, plus extra for dusting
7 Tbsp unsalted butter, chilled and diced
⅓ cup sugar, plus extra for dusting
1 large egg (room temperature), beaten
a little milk, if needed (I didn't need any but yolo)
See? Super simple. Everything you probably already have in your pantry (except "golden raisins" because honestly?)
1. Sift the flour, baking bowder, and salt into a large bowl. Rub the butter into the flour mixture until it resembles fine bread crumbs. Mix in the sugar and the golden raisins. Pour in the (beaten) egg.
2. Mix the ingredients together, bringing the mixture into a ball using your hands. This should be firm enough to roll out, but if it seems too stiff, you can add a little milk (I didn't have to but you never know)
3. On a floured surface, roll out the dough.
Note So when it's rolled out you can use a pastry cutter, but honestly I had WAY better luck when I just used my hands to shape and mold a cake I was going to fry. Felt like I was make a fairly thin hamburger patty.
4. Place a frying pan on medium low heat. Melt a table spoon of butter or just enough to grease the bottom. Throw your cakes in and fry about 3 or so minutes on each side
Take them off the stove, sprinkle with sugar and eat!
These became very popular in the house with demands for more the next day. I'm tickled pink that these are now a "thing" in the house and it's just so good and easy to make.
