Ingredients: 1 cup black beans, soaked overnight. 1 cup kidney beans, soaked overnight. 1 cup corn kernels. 1 can diced tomatoes. 1 onion, diced. 2 cloves garlic, minced. 1 bell pepper, chopped. 1 jalapeo, seeded and finely chopped. 1 teaspoon cumin. 1 teaspoon chili powder. 1/2 teaspoon paprika. Salt and pepper to taste. 4 cups vegetable broth. 2 tablespoons olive oil. Fresh cilantro for garnish. Lime wedges for serving.
Instructions: In a large pot, heat olive oil over medium heat. Add diced onion, garlic, bell pepper, and jalapeo. Saut until vegetables are softened. Add soaked black beans, kidney beans, corn, diced tomatoes, cumin, chili powder, paprika, salt, and pepper. Stir to combine. Pour in vegetable broth and bring the mixture to a boil.
