These Keto Paleo Chicken Scotch Eggs are a tasty take on an old favorite. They taste great and are full of protein, making them perfect for a keto-friendly snack or meal.
Ingredients: 4 large eggs. 1 lb ground chicken. 1/4 cup almond flour. 1/2 teaspoon garlic powder. 1/2 teaspoon onion powder. 1/2 teaspoon paprika. Salt and pepper to taste. 1/4 cup finely chopped parsley optional, for garnish. Avocado oil or ghee for frying.
Instructions: Cover the eggs with water in a saucepan. Bring to a boil, then lower the heat and let it cook for 8 minutes. Take the eggs off the heat, drain them, and then put them in cold water to cool down. Set the eggs aside after peeling them. Ground chicken, almond flour, garlic powder, onion powder, paprika, salt, and pepper should all be mixed together in a bowl. Mix everything together well. Split the chicken mixture into four equal parts. Press down on a piece of the chicken mixture in your hand to make it flat. With care, mold the chicken mixture around the egg, making sure it's completely covered. Place a peeled egg in the middle. Do it again with the rest of the chicken and eggs. In a pan, heat ghee or avocado oil over medium heat. Carefully put the eggs in the pan after coating them. Cook for four to five minutes on each side, or until golden brown and fully cooked.
