Ingredients: 2 medium beets, peeled and grated. 2 medium carrots, peeled and grated. 1/2 cup dried cranberries. 1/4 cup chopped fresh parsley. 1/4 cup chopped walnuts. 1/4 cup crumbled feta cheese. 2 tablespoons olive oil. 1 tablespoon balsamic vinegar. Salt and pepper to taste.
Instructions: Grate the beets and carrots and put them in a large bowl. Chopped parsley, chopped walnuts, and crumbled feta cheese should all be added to the bowl. To make the dressing, mix the olive oil and balsamic vinegar in a small bowl with a whisk. Add the dressing to the salad and mix everything together until it's well covered.
