A tasty and simple-to-make stir-fry dish called Hoisin Chicken is made with tender chicken, crunchy vegetables, and a rich hoisin sauce. Ideal for an easy weeknight supper!
Ingredients: 2 boneless, skinless chicken breasts, thinly sliced. 2 tablespoons hoisin sauce. 1 tablespoon soy sauce. 1 tablespoon rice vinegar. 1 teaspoon sesame oil. 1 tablespoon vegetable oil. 1 red bell pepper, thinly sliced. 1 yellow bell pepper, thinly sliced. 1 small onion, thinly sliced. 2 cloves garlic, minced. 1-inch piece of ginger, minced. 1/2 cup snap peas. Cooked rice, for serving.
Instructions: Mix the rice vinegar, sesame oil, soy sauce, and hoisin sauce together in a bowl. Put aside. In a large skillet or wok, heat the vegetable oil over high heat. Stir-fry the chicken slices for 34 minutes, or until they are cooked through. Take out and place aside from the skillet. Add a little more oil to the same skillet and add the ginger and garlic. Stir-fry for 30 seconds to release the aroma. Add the onion, snap peas, and sliced bell peppers. The veggies should be crisp-tender after another three to four minutes of stir-frying. Place the cooked chicken back into the skillet and cover the contents with the hoisin sauce mixture. Stir-fry for a further two minutes, or until thoroughly heated and coated. Over cooked rice, serve hot.
