Marinated Grapes
1 Lb Red Seedless Grapes
3 Cups Water
1 1/2 Tablespoons Sugar
3 Teaspoons Chinese Five Spice
1 Teaspoon Coriander
4-5 Whole Cloves
Stab the grapes with a toothpick. In a small saucepan boil the water, once boiling add and dissolve the sugar. Lower the temp to simmer and add the remaining spices, let simmer for 5 minutes. In a large mason jar, place the grapes, add the liquid and let chill in the fridge for 6-8 hours.
Struggle Kitchen Produced Bagel

So I had to tell you of my struggle this morning. My toaster has decided to give up the ghost and is not doing a good job of anything besides taking up space now. So this morning I decided to use my panini maker. I cut the bagel in half, well as best I could do. Placed the bagel halves separately on the panini maker and gently pressed the bagel, barely pressing it. Cook it for a few minutes and apply for favorite toppings.
Plan Ahead

So one of the traps we fall into is not knowing what to cook/eat so we eat something quick and generally unhealthy. One thing I like to do is try to plan out what I am cooking for the week, not only for dinners, which my family takes turn cooking but what I am going to eat at work. That is the hardest thing because you have to take into consideration time, ability to warm, ease of eating, etc. Planning ahead will help negate those factors and make lunchtime at work an enjoyable experience. For example I made some pork chops and cooked some sweet potatoes tonight for the next couple of days. I am having leftover sides or a salad with it.
Vegetarian Stir Fry
2 Tablespoons Coconut Oil
Medium Cauliflower, cut into small pieces.
1 Cup Frozen Edamame
1 Red Bell Pepper, cut into large pieces
half dozen Green onion, cut into 1 inch pieces
1 Medium Onion, cut into small pieces
2 Serrano Peppers, cut into thin pieces
1 Tablespoon Minced Ginger
2 Large Garlic Cloves, minced
1/2 Cup Soy Sauce
1 1/2 Tablespoons Fish Sauce
2 Teaspoons Black Pepper
In a very large skillet on medium. Melt Oil and add the cauliflower and cook for 10 minutes, add the ginger, stir in and continue cooking for 7 minutes. Add soy sauce and fish sauce to the pan and cook for 3 minutes. After chopping the other vegetables place in a large bowl with the garlic, peppers, and black pepper and mix. Then add to the skillet and continue to cook for 10 minutes. Serve with Peanuts, and over rice.

Caprese Panini
Hey y’all,
Here is a super simple and yummy recipe for the summer season. I am not a big fan of caprese salads but I can absolutely get behind this sandwich.
Kaiser Roll
2-3 Tomato Slices
Fresh Mozzarella Cheese
1-2 Tablespoons Pesto
1 Teaspoon Black Pepper
2-3 Slices Prosciutto
Slather the bread with the pesto, on the bottom piece, place the prosciutto, followed by tomato slices. Then add the cheese on top of the tomatoes. Close the sandwich. Place your sandwich in the panini maker. Cook until the sandwich is warmed through and the exterior is crunchy.
Broth Bag????

So one of the things I have been doing during this break is making a broth bag. Now what is a broth bag you ask? Well, it is nothing more than a resealable bag full of odds and ends of vegetables.
The outside peel and bases of onions and garlic Tops of green onion, top of peppers, fibrous (base) part of asparagus, odd pieces of veggies that didn't get used, etc. Place in the freezer and pull out when you wanna make veggie broth. Just simply place ingredients in a pot and water and cook til your hearts content. Now if you use peppers (I had put the tops of some jalapenos and Serranos in mine) it will be spicy, so take that into consideration.
After you’re done boiling, I did it for like 25 minutes, place a colander in a bowl on in your cooking pot and drain the ingredients.I used mine to make a soup which if I can properly guestimate the amounts I will try to post.

15 for '15 #2: Bread Stuffing
Hey y'all,
So here is another great Holiday time recipe. I know that the holidays are over but it is never to early to expand your horizons. I have started to figure where my inability to measure things come from. As before, this is a quote from the recipe card handed down the generations.
1 Loaf White Bread, crumbled
Celery
Onions
Poultry Seasoning
Salt and Pepper
Butter
Crumble bread into bowl. Chop Onions, celery, and butter over bread crumbs. Mix well and stuff in cavity of turkey and close.
Leftover Re-do: Taco Scramble
Hey y'all,
So if you are ever like me you have made Tacos and then had some meat left over, not really enough to make tacos again, but just enough to not throw it away.
1/2 Teaspoon Coconut Oil
1 Whole Egg
1 Egg White
1-2 Tablespoons Taco Meat
1-2 Teaspoons Salsa
On medium high heat, melt oil in an omelet pan. In a bowl, mix eggs together and place in pan. Cook for 2-3 minutes before adding Taco Meat and Salsa. Cook til the meat is warm and the eggs are to your desired consistency.
