This festive kale salad has the earthy flavors of sweet potatoes and parsnips and the freshness of kale. It is topped with sweet dried cranberries and crunchy pecans, which makes it a great addition to any holiday table.
Ingredients: 2 cups kale, chopped. 1 large sweet potato, cubed. 2 parsnips, peeled and sliced. 2 tbsp olive oil. 2 tbsp maple syrup. 1/4 cup pecans, chopped. 1/4 cup dried cranberries. Salt and pepper to taste.
Instructions: Get the oven ready by heating it up to 400F 200C. Put the parsnips and sweet potatoes in a bowl and add the olive oil, maple syrup, salt, and pepper. Place the vegetables on a baking sheet and roast them for 25 to 30 minutes, or until they are soft and slightly caramelized. Add a little olive oil and salt to a large bowl, and then massage the kale leaves in it until they start to wilt. Roast the sweet potatoes, parsnips, pecans, and dried cranberries, then add them to the bowl with the kale. Add everything to the bowl and mix it well. You can serve it right away or put it in the fridge to cool down before you do.
