A delicious and Italian-inspired Caprese Frittata with cherry tomatoes, mozzarella, and fresh basil. This frittata is perfect for breakfast, brunch, or a light dinner.
Ingredients: 6 large eggs. 1/2 cup cherry tomatoes, halved. 1/2 cup fresh mozzarella cheese, diced. 2 tablespoons fresh basil, chopped. Salt and pepper to taste. 1 tablespoon olive oil.
Instructions: Preheat your oven to 350F 175C. In a mixing bowl, whisk the eggs and season with salt and pepper. Heat olive oil in an oven-safe skillet over medium heat. Add cherry tomatoes and cook for 2-3 minutes until they start to soften. Pour the whisked eggs into the skillet with the tomatoes. Add the fresh mozzarella and chopped basil evenly on top of the eggs. Cook for 2-3 minutes on the stovetop, allowing the edges to set. Transfer the skillet to the preheated oven and bake for 10-12 minutes until the frittata is set and slightly golden on top. Remove from the oven and let it cool for a minute. Slice the Caprese Frittata into wedges and serve warm. Garnish with additional fresh basil if desired.
