Plan Ahead
Hey y’all,
So one of the traps we fall into is not knowing what to cook/eat so we eat something quick and generally unhealthy. One thing I like to do is try to plan out what I am cooking for the week, not only for dinners, which my family takes turn cooking but what I am going to eat at work. That is the hardest thing because you have to take into consideration time, ability to warm, ease of eating, etc. Planning ahead will help negate those factors and make lunchtime at work an enjoyable experience. For example I made some pork chops and cooked some sweet potatoes tonight for the next couple of days. I am having leftover sides or a salad with it.

15 for '15 #2: Bread Stuffing

So here is another great Holiday time recipe. I know that the holidays are over but it is never to early to expand your horizons. I have started to figure where my inability to measure things come from. As before, this is a quote from the recipe card handed down the generations.
1 Loaf White Bread, crumbled
CeleryÂ
Onions
Poultry Seasoning
Salt and Pepper
Butter
Crumble bread into bowl. Chop Onions, celery, and butter over bread crumbs. Mix well and stuff in cavity of turkey and close.

Meatless Mondays: Roasted Parsnips and Carrots
2 Cups Parsnips, peeled and cut into chunks
2 Cups Carrots, peeled and cut into chunks
1/2 Cup Celery, cut into 1" pieces
1/2 Red Bell Pepper, cut into strips
3 Cups Apple Juice
2 Tablespoons Tapioca
1/2 Tablespoon Cinnamon
Salt
In a medium size baking pan with deep sides, spray cooking spray. Place Parsnips, Carrots, Celery, and Bell Pepper. Add Apple Juice, Tapioca,Cinnamon, and salt. Turn on oven to 350, once to temp place mixture and cook for 1 hour 45 minutes. Around every 30 minutes, check and flip the mixture. Make sure to flip the exposed (if any) veggies.
Chicken Spring Rolls
This is a new recipe I came up with my new obsession of making Spring Rolls, this is a time consuming prep recipe, but this a simple and fun recipe. A hit with the family and a fun way to get your veggies.
Chicken
2 8 oz. Skinless Boneless Chicken Breast, thinly cut
6 Cups Water
2 Tablespoons Minced Ginger
Salt
Roll
6 Green Onion (not the tops), Shredded
2 Mini Cucumber, Shredded
1/3 Cup Microwavable Carrots, diced or shredded
1 Zucchini, julienne
1/3 Red Bell Pepper, julienne
Peanuts
1 Large Garlic Clove, thinly sliced.
1/2 Jalapeno, thinly sliced
9 Spring Roll Wrappers
Warm Water
In a pot, pour water and add salt and Ginger and bring to boil. Once boiling, add chicken and cook for 6 minutes. Drain, and run cool water over the chicken to stop cooking.
Now for the veggies. Take the green onion, remove the green leaves and set aside, if you do not have a shredding tool, do what I did, cut the green onion in quarters and separate the layers. For the cucumber, I simply used my peeler, removed the skin, and then kept peeling til I could no longer peel. Cut the carrots in half and dice. and simply julienne the Zucchini and Bell Peppers.
In a pie dish or similarly sized pan, place warm water.Lay out veggies. Lay out large cutting board. Take a Spring Roll wrapper, dip the wrapper in the water until the entire wrapper is wet, lay on the cutting board.
On the end closest to you, lay chicken (you may wish to shred or cut chicken finer to be able to wrap easier). Then add the veggies om the end further away from you. Starting at that end, start wrapping, it is sticky so be careful, fold in the sides and finish wrapping. If it breaks or tears, simply wrap again in a second wrapper.
On a baking sheet, spray cooking spray. Place the wraps on it. Turn oven on to 300. Place in the oven, cook for 5-6 minutes. Then serve with dipping sauce (recipe to come), hot mustard, and extra peanuts.Â
Tried something new today. Shrimp spring rolls. Definitely going to start playing with this more often.
