Instructions: Place chopped onions and minced garlic in the bottom of the slow cooker. Season pork roast with salt, pepper, and dried thyme, then place it on top of the onions and garlic. In a separate bowl, mix together chicken broth, soy sauce, honey, and Dijon mustard. Pour over the pork roast. Cover and cook on low for 8 hours or on high for 4-5 hours, until the pork is tender and cooked through. Once done, remove the pork roast from the slow cooker and let it rest for a few minutes before slicing. Serve the sliced pork roast with the cooking juices spooned over the top.

Chocolate shavings for garnish optional.
Instructions: In a mixing bowl, combine the chocolate cookie crumbs, melted butter, and granulated sugar. Press this mixture into the bottom of a 9-inch springform pan to form the crust. Chill in the fridge while you prepare the filling. In a microwave-safe bowl, melt the semisweet chocolate chips in 30-second intervals, stirring in between until smooth. Allow it to cool slightly.
