Fellow ARFID and/or Spoonie people, and everyone else too- my solution idea for getting greens now that even chopped salad is unsafe in the USA- We're making "Green Soup".

But Ros, it's HOT!! Yes yes but! Hear me out!

Wash and chop up your greens of choice, and be very careful about sterilizing everything that touched them and your blades and cutting surfaces. HOT dishwasher cycle or a thorough hot water wash and soap will do, as far as I know! Do your own research, but I would NOT fool about with the potential of Cyclospora.

Then you bring your chopped up greens to temp 158F as an unsalted "soup" in water (you can add some lemon juice to help cut that evil evil Bitterness) then when it's spent a couple minutes at the right heat, you pour off most of the water and let it cool.

then drop your cooled "soup" into a blender, and puree it. Pour that into containers or molds of choice and freeze em. Now you have blocks of green stuff in your freezer.

Whenever you need green stuff in your meals, get out frozen fruit and your fave milk or plant milk of choice, some kind of protein powder if you want that, and drop them in a blender with your greens. Pop your ear protectors on and BLEND!

A hefty amount of Citrus in your mix works best, in my experience, to cut the bitterness of greens and cover their flavor. Experiment with what fruits you like.
