These Pumpkin Chocolate Chip Cupcakes are a delightful treat, perfect for fall or anytime you crave the warm flavors of pumpkin and chocolate. They are moist, flavorful, and sure to satisfy your sweet tooth.
Ingredients: 1 1/2 cups all-purpose flour. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/2 teaspoon salt. 1 teaspoon ground cinnamon. 1/2 teaspoon ground nutmeg. 1/4 teaspoon ground cloves. 1/4 teaspoon ground ginger. 1/2 cup unsalted butter, softened. 1 cup granulated sugar. 2 large eggs. 1 cup canned pumpkin puree. 1 teaspoon vanilla extract. 1/2 cup chocolate chips. 1/4 cup milk. 1/4 cup chopped walnuts optional.
Instructions: Warm up your oven to 350F 175C and put cupcake liners in a muffin tin. Mix the cinnamon, nutmeg, cloves, and ginger with the flour, baking powder, baking soda, salt, and all the spices in a bowl. Put away. In a different large bowl, beat the sugar and softened butter together until the mixture is light and fluffy. Beat in the eggs one at a time. Then add the pumpkin puree and vanilla extract and mix well. Slowly add the dry ingredients to the wet ones, mixing only until everything is well combined. If you want to use them, then fold in the chocolate chips and chopped walnuts. Lastly, add the milk and mix it in until the batter is smooth. Fill up each muffin tin cup about two thirds of the way to the top with batter. After the oven is hot, bake the cupcakes for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean. Take the cupcakes out of the oven and let them cool in the pan for a few minutes. Then, move them to a wire rack to finish cooling. You can use your favorite frosting to decorate the cupcakes once they are cool, or you can just eat them plain. If you want to add more flavor, you can sprinkle extra chocolate chips or cinnamon on top.
