With a creamy coconut milk base and a burst of coffee flavor, these dairy-free coffee popsicles are the perfect summer treat. They're simple to make and great for in the afternoon when it's hot.
Ingredients: 2 cups brewed coffee, cooled. 1/2 cup coconut milk. 1/4 cup maple syrup. 1 teaspoon vanilla extract.
Instructions: Put brewed coffee, coconut milk, maple syrup, and vanilla extract in a bowl and mix them together. Mix everything together until it's smooth. Place the mix into popsicle molds. Place a popsicle stick in each mold. Let it freeze for at least six hours, or until it's solid. Run a little warm water around the outside of the molds for a few seconds to get the popsicles out.

Springtime gives me an excuse to make yummy frozen treats, so I'm really really excited about that! My son Jaden is even more excited because he gets to eat them, and I don't feel bad about giving them to him since they are healthier than those store bought pops. These Orange Coconut Creamsicles are free of all those nasty ingredients, dairy free, and delicious!
