Ingredients: 4 Mahi Mahi fillets about 6 ounces each. 8 small corn tortillas. 1 cup shredded cabbage. 1 avocado, sliced. 1 lime, cut into wedges. For the Chipotle Mango Salsa:. 1 ripe mango, diced. 1/2 red onion, finely chopped. 1/4 cup chopped fresh cilantro. 1 chipotle pepper in adobo sauce, minced. 2 tablespoons lime juice. Salt and pepper to taste. For the Fish Marinade:. 2 tablespoons olive oil. 2 cloves garlic, minced. 1 teaspoon ground cumin. 1 teaspoon smoked paprika. 1/2 teaspoon chili powder. Salt and pepper to taste.
Instructions: Put all the ingredients for the chipotle mango salsa in a bowl and mix them together. Add pepper and salt to taste. Put away. Put the ingredients for the fish marinade in a different bowl and mix them together. Cover the Mahi Mahi fillets with the sauce and set them aside for 15 minutes. Get a grill or grill pan hot, but not too hot. The Mahi Mahi fillets should be grilled for three to four minutes on each side, or until they are flaky and cooked all the way through. For about 30 seconds on each side, warm the corn tortillas up on the grill. Put a grilled Mahi Mahi fillet on each tortilla to make the tacos. Add avocado slices, chipotle mango salsa, and shreds of cabbage on top. Add some fresh lime juice on top. Serve right away and enjoy!
