A tasty and cool salad with couscous, tender chicken, sweet mango, and creamy goat cheese, all mixed together with a tangy lemon dressing.
Ingredients: 200g couscous. 200g cooked chicken breast, diced. 1 ripe mango, peeled and diced. 100g goat cheese, crumbled. 1 red bell pepper, diced. 1 cucumber, diced. 1/4 red onion, finely chopped. 2 tablespoons fresh cilantro, chopped. 2 tablespoons olive oil. 2 tablespoons lemon juice. Salt and pepper to taste.
Instructions: Prepare the couscous according to the package instructions and let it cool. In a large bowl, combine the cooled couscous, diced chicken, diced mango, crumbled goat cheese, diced red bell pepper, diced cucumber, and finely chopped red onion. In a small bowl, whisk together the olive oil and lemon juice to make the dressing. Season with salt and pepper to taste. Drizzle the dressing over the salad and toss everything together until well combined. Sprinkle fresh cilantro on top for added flavor and garnish. This Mango Quinoa Halwa is a tasty and healthy take on the traditional halwa. It's made with quinoa, mango, and fragrant spices. Quinoa is good for you, and ripe mangoes are sweet. In this dessert, they go well together.
Ingredients: 1 cup quinoa. 2 cups mango puree. 1/2 cup ghee. 1 cup sugar. 1 cup milk. 1/2 cup chopped nuts cashews, almonds. 1/2 teaspoon cardamom powder.
Instructions: Rinse quinoa thoroughly and cook it according to package instructions. In a pan, heat ghee and add cooked quinoa. Saut for 2-3 minutes. Add mango puree and stir well. Cook for another 5 minutes. Pour in milk and sugar. Mix until well combined and let it simmer until the halwa thickens. Add chopped nuts and cardamom powder. Stir and cook for an additional 2-3 minutes. Remove from heat and let it cool slightly before serving.

Ingredients: 2 chicken breasts, grilled and diced. 1 mango, diced. 1 can black beans, drained and rinsed. 1 red bell pepper, diced. 1/4 cup red onion, finely chopped. 1/4 cup cilantro, chopped. 2 tablespoons lime juice. 1 tablespoon olive oil. Salt and pepper to taste.
Instructions: Dice the chicken and put it in a large bowl. Add the black beans, red bell pepper, red onion, and cilantro. Mix olive oil, lime juice, salt, and pepper in a small bowl with a whisk. Add the dressing to the salad and mix it all together. Serve right away or put in the fridge until you're ready to serve.

These Ahi Tuna Tacos that have been seared are full of fresh flavors and bright colors. The crunchy cabbage, sweet mango, creamy avocado, and sour Sriracha mayo go well with the soft seared tuna. It's an easy and quick dish that everyone will love!
Ingredients: 4 Ahi tuna steaks about 6 ounces each. 2 tablespoons soy sauce. 1 tablespoon sesame oil. 1 teaspoon honey. 1 teaspoon grated ginger. 1 clove garlic, minced. 8 small corn tortillas. 1 cup shredded cabbage. 1/2 cup diced mango. 1/4 cup chopped cilantro. 1 avocado, sliced. Sriracha mayo, for serving. Lime wedges, for serving.
Instructions: Place soy sauce, sesame oil, honey, ginger, and garlic in a shallow dish. Mix them together. Turn the tuna steaks over in the marinade to coat them. For 15 to 30 minutes, let it sit. Set the pan on medium-high heat. Take the tuna out of the marinade and sear it for one to two minutes on each side, or until it's done the way you like it. Take it out of the pan and let it rest for a few minutes. Then, cut it into thin slices. For about 30 seconds on each side, warm the corn tortillas in the pan. Shred cabbage and put it on each tortilla. Then add slices of seared tuna, diced mango, chopped cilantro, avocado slices, and a drizzle of Sriracha mayo. Put lime wedges on the side and serve right away.

Instructions: Preheat the oven to 350F 175C. In a mixing bowl, combine almond flour, cocoa powder, honey or maple syrup, melted coconut oil, vanilla extract, and a pinch of salt. Mix until well combined to form the brownie batter. Spread the brownie batter evenly onto a lined baking sheet. Bake for 15-20 minutes, or until the edges are set and a toothpick inserted into the center comes out clean. Allow the brownie to cool completely, then cut it into small cubes. In serving glasses or bowls, layer diced mango, Greek yogurt, and brownie cubes. Repeat the layers until the glasses or bowls are filled. Drizzle honey on top for extra sweetness, if desired. Serve immediately or refrigerate until ready to serve.
