Ingredients: 1 cup grated carrots. 1/2 cup unsweetened applesauce. 1/4 cup maple syrup. 1/4 cup almond milk. 1 tsp vanilla extract. 1 1/2 cups whole wheat flour. 1 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp cinnamon. 1/4 tsp nutmeg. 1/4 cup chopped walnuts optional.
Instructions: Preheat oven to 350F 175C and grease a muffin tin. In a bowl, mix grated carrots, applesauce, maple syrup, almond milk, and vanilla extract. In another bowl, combine flour, baking powder, baking soda, cinnamon, and nutmeg. Add wet ingredients to dry ingredients and mix until just combined. Fold in chopped walnuts if using. Divide batter evenly into muffin cups. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean. Allow muffins to cool before serving.
