Saag Tofu Saag is a traditional Punjabi winter recipe made with mixed greens, wet & dry spices. Traditionally Mustard Greens & Spinach are used. I used a mix of Dandelion greens, Choy Sum, Celery, Cauliflower leaves, baby Spinach along with the green juice pulp leftovers π See the post accompanying for the full recipe π We need, π’ 3 cups of mixed Greens, rinsed well & chopped (I used 1 cup of green pulp) π’ 1 medium Onion, chopped π’ 2 - 4 Garlic Cloves, minced π’ 1β Ginger root, grated π’ 2 small Tomatoes, chopped π’ 4 tablespoons Kasoori Methi π’ 1 - 2 cups Water π’ 2 tablespoons Coriander stalks & leaves, minced πΈ1/2 teaspoon Turmeric πΈ1 teaspoon Red Chilli Powder πΈ1/4 teaspoon Asafoetida πΈ 2 teaspoons Cumin Powder πΈ Salt, to taste Combine in a small bowl. π’ 1 cup of medium Tofu, sliced thinly & Airfried for 12 - 14 minutes at 175 degrees C. To cook, π© Add all the greens & pulp, onion, ginger, garlic, tomatoes, salt, a dash of the spices and half the water to a pressure pan. Cook for 10 - 15 minutes. π© In a deep pan roast the rest of the dry spices on low heat until aromatic. π© PurΓ©e the greens mix and add to the pan. π© Add the rest of the water to adjust consistency to a thick but scoopable gravy. π© Stir in the Kasoori Methi (dried Fenugreek leaves). π© Add the airfryer Tofu pieces, cover & cook for 7 to 10 minutes on low heat. π© Take off the heat & garnish with coriander leaves.
