This Strawberry Herbed Rice Salad is a delightful combination of sweet and savory flavors, perfect for a refreshing summer meal. The juicy strawberries, fragrant herbs, and tangy feta cheese complement the fluffy rice, all brought together with a balsamic vinaigrette dressing.
Ingredients: 1 cup cooked rice. 1 1/2 cups fresh strawberries, sliced. 1/4 cup fresh basil leaves, chopped. 1/4 cup fresh mint leaves, chopped. 1/4 cup red onion, finely chopped. 1/4 cup feta cheese, crumbled. 1/4 cup balsamic vinaigrette dressing. Salt and pepper to taste.
Instructions: Put the cooked rice, strawberry slices, basil, mint, and red onion that have been chopped up into a large bowl. Crumble the feta cheese and add it to the bowl. Mix the ingredients together gently. Add the balsamic vinaigrette dressing to the salad and toss it around so that all the ingredients are covered. Add pepper and salt to taste. Put it in the fridge for at least 30 minutes to let the flavors mix. Serve cold, and if you want, add more fresh herbs on top.
