A refreshing and nutritious salad featuring the sweet flavors of mango, the creaminess of avocado, and the protein-rich black beans, all tossed with quinoa and a zesty lime dressing.
Ingredients: 1 cup quinoa, rinsed and drained. 2 cups water. 1 can 15 oz black beans, drained and rinsed. 2 ripe mangos, peeled, pitted, and diced. 2 avocados, peeled, pitted, and diced. 1 red bell pepper, diced. 1/2 red onion, finely chopped. 1/4 cup fresh cilantro, chopped. 1/4 cup fresh lime juice. 2 tablespoons olive oil. 1 teaspoon cumin. Salt and pepper to taste.
Instructions: In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until quinoa is cooked and water is absorbed. Remove from heat and let it cool. In a large bowl, combine cooked quinoa, black beans, diced mangos, diced avocados, diced red bell pepper, finely chopped red onion, and chopped cilantro. In a small bowl, whisk together fresh lime juice, olive oil, cumin, salt, and pepper. Pour the lime dressing over the salad and gently toss to combine all the ingredients.
