24 Focaccia Mini-Muffins

250g flour (I do 50/50 all-purpose and bread flours)

1/2 packet Instant Yeast

1/2T salt

225g lukewarm water

Olive oil (amount depends on personal preference/what you need for it to not be sticky)

Mix dry ingredients in a medium bowl.

Add water and mix until dough forms. Make sure to scrape all the flour from the sides of the bowl—it doesn't incorporate easily.

Use a few tablespoons of olive oil to coat the top of the dough ball in the bowl. Use your hands to cover the sides and bottom of the dough ball with the olive oil from the top—you want to keep it from sticking to the bowl.

Cover loosely with a lid or a tea towel and let rest for 1.5–2 hours. The dough will expand and become lighter and airier to the touch.

Preheat the oven to 375° F.

Coat the cups of a mini muffin tin with olive oil. Fill each cup with a dough ball that fills it 2/3rds of the way.

Press one finger down through the middle of each dough ball until it touches the bottom.

Sprinkle with salt. If you want to add toppings, now is the time!
