This Roast Vegetable Quinoa Salad is a tasty and healthy dish that is both vegan and paleo-friendly. Flaky quinoa is mixed with a rainbow of roasted vegetables, cherry tomatoes, and fresh herbs. A tangy balsamic dressing coats everything. Great for a healthy dinner or lunch!
Ingredients: 1 cup quinoa. 2 cups water. 2 cups mixed roast vegetables e.g., sweet potatoes, bell peppers, zucchini. 1 cup cherry tomatoes, halved. 1/2 red onion, thinly sliced. 1/4 cup fresh parsley, chopped. 1/4 cup fresh basil leaves, torn. 1/4 cup extra-virgin olive oil. 2 tablespoons balsamic vinegar. Salt and pepper to taste. 1/4 cup toasted pine nuts optional. 1/4 cup avocado optional, for garnish. Lemon wedges optional, for serving.
Instructions: Rinse the quinoa thoroughly under cold water and drain. In a medium saucepan, bring 2 cups of water to a boil. Add the rinsed quinoa, reduce heat to low, cover, and simmer for 15-20 minutes or until the quinoa is cooked and the water is absorbed. Remove from heat and let it cool. Preheat your oven to 400F 200C. Toss the mixed roast vegetables in 2 tablespoons of olive oil, salt, and pepper. Spread them out on a baking sheet and roast for 20-25 minutes or until they are tender and slightly caramelized. Remove from the oven and let them cool. In a large bowl, combine the cooked quinoa, roast vegetables, cherry tomatoes, red onion, parsley, and torn basil leaves. In a small bowl, whisk together 1/4 cup of extra-virgin olive oil and 2 tablespoons of balsamic vinegar. Season with salt and pepper to taste. Drizzle the dressing over the salad and toss to combine. Taste and adjust seasoning as needed. If desired, garnish the salad with toasted pine nuts and slices of avocado. Serve the Roast Vegetable Quinoa Salad with lemon wedges on the side for an extra burst of flavor.
