A quick and flavorful ramen recipe that combines the convenience of instant noodles with a rich and spicy miso broth. Perfect for a delicious and speedy meal.
Ingredients: 2 packs of instant ramen noodles. 4 cups chicken broth. 2 tbsp miso paste. 1 tbsp soy sauce. 1 tbsp sesame oil. 1 tsp grated ginger. 2 cloves garlic, minced. 1/2 cup sliced shiitake mushrooms. 1/2 cup sliced green onions. 1/4 cup corn kernels. 1 tsp chili garlic sauce. 2 soft-boiled eggs, halved. Seaweed sheets for garnish.
Instructions: Follow the directions on the package to boil the instant ramen noodles. Remove the water and set it aside. Miso paste, soy sauce, sesame oil, grated ginger, and minced garlic should all be put in a pot together. Over medium-low heat, bring to a boil. The broth should now have shiitake mushrooms, green onions, corn kernels, and chili garlic sauce added to it. After 5 to 7 minutes, the vegetables should be soft. Put some of the cooked ramen noodles in each bowl to serve. Pour the hot miso broth over the noodles. Soft-boiled eggs and seaweed sheets can be used as garnish. Your Spicy Miso Ramen Express is ready to eat when it's hot.

A hearty and tasty quinoa chili that tastes Damn Good! This vegetarian chili is a filling and healthy meal for any day because it is full of protein and vegetables.
Ingredients: 1 cup quinoa, rinsed. 2 cups vegetable broth. 1 tablespoon olive oil. 1 onion, chopped. 3 cloves garlic, minced. 1 bell pepper, diced. 1 zucchini, diced. 1 can 15 oz black beans, drained and rinsed. 1 can 15 oz kidney beans, drained and rinsed. 1 can 15 oz diced tomatoes. 1 cup corn kernels fresh or frozen. 2 teaspoons chili powder. 1 teaspoon cumin. 1/2 teaspoon paprika. 1/2 teaspoon oregano. Salt and pepper to taste. 2 cups vegetable broth. Chopped green onions, for garnish. Shredded cheddar cheese, for garnish. Fresh cilantro, chopped, for garnish. Sour cream, for serving.
Instructions: In a medium saucepan, combine quinoa and 2 cups of vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until quinoa is cooked and liquid is absorbed. In a large pot, heat olive oil over medium heat. Add chopped onion and saut until softened, about 3 minutes. Add minced garlic, diced bell pepper, and diced zucchini to the pot. Cook for an additional 5 minutes, or until vegetables are tender. Stir in black beans, kidney beans, diced tomatoes, corn, chili powder, cumin, paprika, oregano, salt, and pepper. Add the cooked quinoa and 2 cups of vegetable broth. Bring the chili to a simmer and let it cook for 15-20 minutes to allow flavors to meld. Serve the quinoa chili hot, garnished with chopped green onions, shredded cheddar cheese, fresh cilantro, and a dollop of sour cream. Enjoy your Damn Delicious Quinoa Chili!

Ingredients: 4 large red bell peppers, roasted and peeled. 1 large onion, chopped. 3 cloves garlic, minced. 2 tablespoons olive oil. 4 cups vegetable broth. 1 can 14 oz diced tomatoes. 1 teaspoon dried oregano. 1 teaspoon smoked paprika. Salt and pepper to taste. 1/2 cup goat cheese, crumbled. Fresh basil leaves for garnish.
Instructions: Put olive oil in a big pot and heat it over medium-low heat. Put in the chopped onions and cook them until they become clear. Add the minced garlic and cook for one more minute. Peel and roast the red bell peppers, then add the diced tomatoes, vegetable broth, oregano, smoked paprika, salt, and pepper. After the soup starts to boil, turn down the heat and let it cook slowly for 20 minutes. Blend the soup with an immersion blender until it is smooth and creamy. If you need to, change the seasoning. Put the soup in bowls and top each one with fresh basil leaves and crumbled goat cheese. Have fun with the rich and tasty roasted red pepper soup!
