Instructions: In a big pot, heat the olive oil over medium-low heat. Cut up the onion, celery, and garlic and put them in the pot. For about 8 to 10 minutes, or until the vegetables are soft, saut. Add chicken or vegetable broth. Bring to a boil, then lower the heat and let it cook for 15 minutes. Blend the soup until it's smooth with an immersion blender.
