A classic Japanese comfort food, Miso Ramen is a hearty noodle soup with rich umami flavor from miso paste. Topped with mushrooms, bok choy, and soft-boiled eggs, it's a delicious and satisfying meal.
Ingredients: 200g ramen noodles. 4 cups chicken broth. 2 tbsp miso paste. 1 cup sliced shiitake mushrooms. 1 cup baby bok choy. 2 soft-boiled eggs. 1 sliced green onion.
Instructions: Cook ramen noodles according to package instructions. In a separate pot, heat chicken broth until simmering. In a bowl, mix miso paste with a ladle of hot broth until dissolved, then add it to the pot. Add sliced mushrooms and bok choy to the broth and simmer until vegetables are tender. Divide cooked noodles among serving bowls and ladle the hot broth with vegetables over them. Top with halved soft-boiled eggs and sliced green onions. Serve hot and enjoy!
