When you think of your health you should think of your internal health, and the health of your external environment. The two are intrinsically interconnected. There is no point being healthy if your planet is dying. Health is holistic. You cannot live without your world. A diet which is good for you but kills the planet is not good for you at all. A diet that involves animal products or organic food is not more healthy for you. Any diet that uses excessive resources, land, water, and animal exploitation per calorie is not healthy. It is not only selfish but also self-destructive. You cannot call yourself "healthy" unless you are also sustainable.
