With this heat we’ve been having we needed something filling yet light - this is a perfect meal in a bowl! The dressing is home made ranch: Greek yogurt, Mayo, buttermilk, fresh chives, parsley, dill, garlic and onion powder. Next I marinated @gardein chicken in BBQ sauce and browned it in a pan. Cooked some pasta. Any kind of Stromboli is good with me - especially if it’s easy like this one! This is a vegetarian Sausage and Roasted Red Pepper Braid. I used a frozen bread dough loaf, thawed. Layer on fresh mozzarella, @morningstarfarms Italian sausage crumbles, roasted red pepper, fresh garden thyme, and a drizzle of pasta sauce. Fold it all up, brush with olive oil and sprinkle with sesame seeds. Bake - enjoy! I’m always looking for easy yet tasty recipes and so I had to try this easy Southwestern Chicken Pot Pie via @foodnessgracious The base is a roux and broth, @gardein chicken, black beans, sweet pepper, corn, cumin and paprika and cheese. It’s topped with biscuits in a can and you dip the tops in chili powder. Bake it up and top with fresh cilantro! Well, it’s not perfect but it’s the first real thing I’ve made since surgery! It took me all afternoon because I have to rest between each step of the recipe but that’s ok. I did it! This is a Grilled Lemon 🍋 Chicken Avocado Orzo Salad with a Honey 🍯 Mustard Bacon Dressing - and it’s vegetarian of course! It’s the marinade/dressing that makes it great. Olive oil, honey, Dijon, lemon, balsamic vinegar, garden herbs (rosemary, thyme, basil, oregano), shallot, garlic. Divine! The @gardein chicken gets marinated in that and then grilled. Roast or grill a red pepper and chop it. Combine that, the @gardein chicken, and cooked orzo, smoked cheddar, cherry tomatoes, and cooked @morningstarfarms bacon with the remaining dressing. Serve it over lettuce topped with goat cheese. Yummm.
