In my previous post, I explained there are limited vegan options in Columbus. Although they don’t deliver, I still was highly pleased with @properlyfueled. It’s a cute boutique restaurant. The food was delicious. I had All Hail Kale Caesar and added grilled tofu. I also tried the Smoky Sweet Potato Salad. I was worried that I wouldn’t like coconut bacon, but it was good. It was nice to be at a place where I didn’t have to make alterations to my dishes. Everyone is welcome regardless of experience level or commitment to veganism. There is no cost to attend the class and all participants are responsible for obtaining their ingredients and use of a baking oven and stove. I haven’t posted any food pics in a while. This is a recipe called Gullah Caviar that I found on Food Network. The recipe is ok. The base of black-eyed peas makes a great change for a summer salad. However, the recipe calls for too much oil so it was a bit overpowering. Also, I thought it was a bit bland, especially if it’s using the description Gullah.
