It may not look the prettiest, but I had my first vegetarian thanksgiving. As someone who’s never been a fan of turkey at thanksgiving and I haven’t liked ham for years, this was the best thanksgiving I’ve had in years. Lunch included mushrooms with gravy over brown rice, cornbread casserole, stewed tomatoes and okra, and spinach. Dinner was fried mushrooms, cornbread casserole, stuffing, and spinach. Neither was completely healthy, but absolutely fabulous.
