Tonight’s dinner was a teriyaki stir-fry. I couldn’t get the stir-fry kit that I wanted from Whole Foods, but I think this came out better (and I definitely got more lol). I combined broccoli coleslaw, riced cauliflower with vegetables, and stir-fry vegetables with maitake mushrooms. I just realized that I never posted my pics from my Mother’s Day Box by @crustveganbakery. They provided great service, and we look forward to visiting them in person once everything calms down. The box contained a pistachio cardamom rose bun, a sausage and cheese biscuit, a slice of cheesecake, two soft frosted sugar cookies, a brookie, and a few chocolate chip cookies. While the rose bun was the favorite for both of us, my mom enjoyed the brookie next, whereas I enjoyed the sugar cookie. The star of this meal was my chickpea salad. I went back for seconds. I got the recipe from @sweetpotatosoul’s cookbook. You’re supposed to use black-eyed peas, but there were none to be found in this area. It’s not New Year’s Eve!!! 😭😂 It didn’t matter though because this was still a fabulous dish.
